Norwegian King Crab with Parsley Aioli and Crispy Onions

Procedure

  • In a high-speed blender, combine oil and parsley; run until parsley is fully mixed with oil.

  • Into a large sauté pan over medium heat, pour parsley-oil mixture and cook over a simmer until bright green, 3 to 4 minutes.

  • Strain oil through a fine mesh sieve lined with cheesecloth and chill.

  • When oil is cool but not cold, place egg yolks and mustard into the mixing bowl of a stand mixer; turn up to speed 3 and slowly drizzle in parsley oil to create a mayonnaise. Season to taste with salt and pepper.

  • Peel the crab and cut into 2-inch pieces. Serve with aioli and crispy onions on the side as garnish.
