A special type of cod, Quality-Labelled Skrei has landed on the UK food scene straight from the cold, clear waters of Northern Norway. To celebrate, the Norwegian Seafood Council and Michel Roux Jr took a group of the UK's finest chefs including Glynn Purnell, Nieves Barragán Mohacho, Adam Handling, Simon Hulstone and 2017 Young National Chef of the Year Ruth Hansom, out to Sommarøy to catch, cook and taste Quality-Labelled Skrei at source.
Inspired by her time out in Norway, Hansom later developed a show-stopping menu to cook at the Norwegian Ambassador’s Residence, with National Chef of the Year from 2008 and Michelin Starred Chef, Simon Hulstone, for Michel Roux Jr and industry friends, as part of her prize for taking the title of Young National Chef of the Year.
Originally from Darlington, Ruth - now Commis Chef at The Ritz in London - saw off nine other chef finalists aged between 18 and 23 to be crowned the first female Young National Chef of the Year at The Restaurant Show in London 2016, supported by the Norwegian Seafood Council.
