Oven Baked Norwegian Cod with Vegetables

Procedure

• Preheat the oven to 180°C.
• Cut the cod in suitable portions.
• Slice the zucchini and onion. Add to an oven dish together with whole cherry tomatoes.
• Drizzle with olive oil and season with salt and pepper, then bake in the oven for about five to six minutes.
• Take the dish out of the oven, arrange the cod on top of the vegetables and bake for a further 10 minutes or so. 
• Add olives and basil to the dish.
Serving suggestion: Mashed potatoes.
