Prepared in a traditional Mexican-style marinade, these baked Norwegian Salmon tacos are topped with fresh vegetables, guacamole and lime sour cream
Preheat oven to 375°F, if only marinating breifly.
Cut salmon into 1" cubes.
Shred the lettuce and chop the tomatoes.
Combine half the lime juice, cumin, garlic powder, olive oil, paprika, cayenne pepper, oregano and pepper in a medium bowl.
Place salmon in a baking dish and pour marinade over salmon. Marinate for at least 20 minutes or up to 2 hours refrigerated.
Season salmon with salt, cover with lid or foil and bake at 375°F for 12-15 minutes, or to desired temperature.
Combine sour cream with 2 tbsp lime juice.
Serve salmon with warm tortillas, shredded lettuce, diced tomatoes, guacamole and lime sour cream.
Serve with white rice and black beans.
