Flavourful, lightly breaded and easy-roasted Norwegian Salmon nuggets.
Preheat oven to 400 °F.
Cut salmon into 1” nuggets (pieces should be of same thickness for even cooking).
Lightly beat the eggs with a pinch of salt, set aside.
Mix salt and pepper with breadcrumbs.
Brush a sheet pan or cookie sheet with oil.
Dip a nugget in egg and then roll in breadcrumb mix, place on prepared pan; repeat until all nuggets have been breaded.
Bake for 10 minutes, or until cooked to desired temperature.
Remove from oven.
Serve with pommes frites and ketchup.
