
Marit Bjorgens baked Norwegian cod
This recipe is roast cod and gratin with cheese and mustard. And as always, tomato and basil are a perfect combination and excellent accompaniment to fish.

Preheat the oven to 180C.

Cut the Norwegian cod into equal sized pieces and place in greased casserole dish.

Sprinkle on salt and pepper.

Grate the cheese and mix with mustard, cream and chopped chives.

Spread the mixture onto the cod.

Roast in the oven for 15 minutes.

Cut tomatoes in half and place in a greased baking dish with the tomato cut surface facing upwards.

Sprinkle with salt, pepper, chopped basil and a little olive oil.

Place the tomatoes into the oven together with the cod for the last 10 minutes of cooking.

Serve with a delicious salad or new potatoes.
