- Preheat the oven to 200C/180C fan/ gas mark 6.
- Place the potatoes in a large roasting tin (big enough to hold everything) with the peppers and onion, pour over the olive oil and give it all a good mix.
- Roast for 20 minutes. Add in the chorizo, olives, tomatoes and wine and cook for another 10 minutes. Dust the cod with the paprika then nestle it into the vegetables with the lemon wedges and bake for 10-12 minutes.
- Season and serve scattered with the parsley.
