Ingredients
800gNorwegian cod fillet, skinned and boned
2tbspolive oil
12tortilla wrap
Spice mix
0.5tspcayenne pepper
1tspsmoked paprika
0.5tspgarlic powder
1tspcumin, ground
1tsporegano, dried
3tbspflour, fine wholemeal
Guacamole
3avocadoes
0.5red onion
1red chilli pepper
1clovegarlic
2lime
2bunchcoriander leaves, fresh
Salad
200gtomato
1.5handful ofparsley, fresh
1.5handful ofbasil, fresh
1packsalad
1mango
1red onion
2tbspolive oil
2tbspred wine vinegar
1tspsugar
Preparation
- Cut the cod into cubes and mix it with all the spices in a bowl.
- Put all the ingredients for the guacamole into a food processor and mix until the right texture.
- Finely chop the herbs. Cut tomatoes and mango into small cubes. Slice the red onion into thin slices. Mix together with the salad.
- Mix oil, vinegar and sugar and pour over the salad.
- Fry the fish in a frying pan for 2-3 minutes, flip them carefully so they dont break.
- Fry the tortillas in a frying pan shortly until slightly golden
Serve the tortillas with salad, guacamole, cod and creme fraiche, top with coriander.
