Preparation
- Preheat the oven to 180°C.
- Cut the cod in suitable portions.
- Slice the courgette and onion. Add to an oven proof dish together with whole cherry tomatoes.
- Drizzle with olive oil and season with salt and pepper, then bake in the oven for about five to six minutes.
- Take the dish out of the oven, arrange the cod on top of the vegetables and bake for a further 10 minutes or so.
- Add olives and basil to the dish and serve.
Tip: You can serve this dish with your favourite sides, such as mashed potatoes or some good bread.
