Preparation
- Preheat the oven to 200°C/180°C fan.
- Cut the peppers into strips and sliver the garlic.
- Cut the cod into portion sizes, 120 g each.
- Crumble the black pudding into large pieces.
- Lightly grease a baking sheet with a little olive oil.
- Put the pieces of fish onto the baking sheet and scatter the black pudding, peppers and slivers of garlic evenly onto the tray.
- Finely chop the parsley, mix it with the olive oil and drizzle the mixture over the fish. Season with a little salt and pepper and top with the thyme sprigs.
- Place in the preheated oven for 8-10 minutes, basting half-way through the cooking time, until the fish is opaque and flakes when pressed.
- Remove from the oven and serve immediately.
