- Pre heat the oven to 180 degrees. Put the cod in a ovenproof dish and season.
- Chop the chilli and garlic and mix together with soy sauce, fish sauce, lime juice, sugar, sesame oil and 2 tbsp water.
- Spread half the sauce over the cod and roast in the oven for 20 minutes, until the cod flakes.
- Meanwhile, cook rice noodles according to the description on the package.
- Add a litte oil to a frying pan and cook the vegetables for 2 minutes over high heat. Add a splash of water in, and let it steam before mixing in oyster sauce and sesame seeds.
- Serve the cod with noodles, vegetables, and top with the remaining chilli-garlic sauce, peanuts, finely chopped spring onion and coriander.
