Asian Norwegian Haddock en Papillote with Tomato Chilli Salsa

- Preheat the oven to 180°C/160°C fan.
- Finely chop the garlic and grate the ginger.
- Mix the soy sauce, sweet chilli sauce, ginger, garlic, sesame oil and rice vinegar together in a bowl and season with a little pepper. Cover and leave to marinate for about 5 minutes.
- Cut large sheets of baking parchment, big enough to be able to wrap the fish in (approx. 30 x 37cm).
- Place one of the haddock fillets in the centre of one of the pieces of baking parchment and top with coriander, deseeded and thinly sliced chilli and two slices of lime. Bring the sides of the parchment up over the haddock, pour marinade over the fillet of haddock, then scrunch the paper tightly together to seal the fish in a parcel. Repeat with the next fillet(s) of haddock.
- Put the parcels onto an oven tray and bake in the preheated oven for 10–12 minutes. Remove from the oven and allow to rest for 2-3 minutes.
- Make the salsa by finely chopping all the ingredients and mixing them together in a bowl.
- When the haddock is done, carefully undo the baking parchment.
- Serve the fish in its parchment parcel, topped with the tomato and chilli salsa.
