- Cut vegetables into suitable pieces.
- Fry the onion in some oil and add the curry paste.
- Add the vegetables and coconut milk and let it simmer for 2-3 minutes.
- Season with salt, lime and pepper.
- Add the prawns just before serving and allow time to heat through thoroughly.
- Garnish with fresh coriander.
- Serving suggestion - Serve with freshly boiled fluffy dry white rice.
