Preparation

  • Cut vegetables into suitable pieces.
  • Fry the onion in some oil and add the curry paste.
  • Add the vegetables and coconut milk and let it simmer for 2-3 minutes.
  • Season with salt, lime and pepper.
  • Add the prawns just before serving and allow time to heat through thoroughly.
  • Garnish with fresh coriander.
  • Serving suggestion - Serve with freshly boiled fluffy dry white rice.
