A healthy dish perfect for all the family. Quick and easy to make this is ideal for a delicious and nutritious lunchtime snack or New Year party.
Rinse the Norwegian salmon fillet in cold water, pat dry and chop finely. Add the chives and season with salt and pepper. Shape the chopped salmon mixture into four flat patties. Melt the butter in a frying pan and heat the patties in the pan for 2-3 minutes on each side.
Wash the tomato and cucumber and cut into slices.
Cut the slices of bread in two, to create two thin slices and toast. Lay out one of the halves of bread on the plate and layer with one lettuce leaf, a salmon patty and add the cucumber slices and tomato to garnish. Spread cream cheese on the remaining bread halves and add to top the burger.
Serve with cherry tomato and cucumber salad.
