Norwegian salmon nuggets

  • Preheat oven to 400 °F.

  • Cut salmon into 1” nuggets (pieces should be of same thickness for even cooking).

  • Lightly beat the eggs with a pinch of salt, set aside.

  • Mix salt and pepper with breadcrumbs.

  • Brush a sheet pan or cookie sheet with oil.

  • Dip a nugget in egg and then roll in breadcrumb mix, place on prepared pan; repeat until all nuggets have been breaded.

  • Bake for 10 minutes, or until cooked to desired temperature.

  • Remove from oven.

Serve with pommes frites and ketchup.
