Preparation
- Cut salmon into 1" cubes.
- Grate or finely chop ginger.
- Finely chop garlic and scallions.
- Cut brocoli into small florets. Thinly the slice carrots. Cut the bell peppers into 1/4" strips. Cut the green beans into 3" pieces. Chop the cilantro.
- Squeeze the orange and reserve juice.
- Heat wok over medium-high flame. Add peanut oil, then ginger, garlic and scallions. Cook for 30 seconds.
- Add broccoli, carrots, red bell peppers and green beans. Saute for 4-5 minutes.
- Add stir-fry sauce and salmon and cook for a further 3-4 minutes.
- Finish with sesame oil, orange juice and chopped cilantro.
Serving Suggestion: Serve with brown fried rice with scallions.
