Mix together the Norwegian smoked salmon, cream cheese, creme fraiche and fresh herbs using a hand blender to ensure a smooth texture
Add chili flakes or cayenne pepper and black pepper to the mixture, and then the zest from half a lemon and a squeeze of lemon juice. Add extra lemon, salt, and pepper to taste
Spoon into small shot glasses or glass dishes to serve as an elegant tray of canapés, Garnish each mousse with caviar and a small sprig of dill.
