- Prepare pizza dough according to pack instructions, shape and bake in the oven at 220 C until crispy and allow to cool slightly, or use ready made flatbread.
- Meanwhile, mix together the crème fraiche, dill and black pepper and season with a little salt then cover and chill.
- Lightly season and pan fry the salmon over a medium-high heat for 8-10 minutes until golden and cooked through. Cool slightly then gently break apart into chunks.
- Spread the crème fraiche mixture over the pizza base and top with plenty of salmon, avocado, rocket, dill and lemon zest.
- Season with more cracked black pepper, then drizzle over extra virgin olive oil before serving
