Preparation
- Scrape and wash the Norwegian salmon well to ensure all the scales are removed and it is thoroughly clean. Place the salmon skin side down on a baking tray lined with baking paper.
- Crush the peppercorns and juniper berries and mix them with the cayenne pepper, parsley, sugar, salt, lemon peel, lemon juice and oil.
- Place ingredients in a heavy bottomed pan and let the mixture simmer for approx. 1 hour. When done, brush over the exposed side of the salmon. Bake the salmon for approx. 30 minutes in a pre-heated oven at 160˚C until it is just cooked through – salmon is best served with a pink core.
- Serve the Norwegian salmon whole with boiled potatoes and steamed seasonal vegetables or salad.
