This is an ideal dinner party meal, full of delicious flavours and is quick and easy to prepare and cook.
Scrape and wash the Norwegian salmon well to ensure all the scales are removed and it is thoroughly clean. Place the salmon skin side down on a baking tray lined with baking paper.
Crush the peppercorns and juniper berries and mix them with the cayenne pepper, parsley, sugar, salt, lemon peel, lemon juice and oil.
Place ingredients in a heavy bottomed pan and let the mixture simmer for approx. 1 hour. When done, brush over the exposed side of the salmon. Bake the salmon for approx. 30 minutes in a pre-heated oven at 160˚C until it is just cooked through – salmon is best served with a pink core.
Serve the Norwegian salmon whole with boiled potatoes and steamed seasonal vegetables or salad.
