Procedure

  • Cut vegetables into suitable pieces

  • Fry the onion in some oil and add the curry paste

  • Add the vegetables and coconut milk and let it simmer for 2-3 minutes

  • Season with salt, lime and pepper

  • Add the prawns just before serving and allow time to heat through thoroughly

  • Garnish with fresh coriander

Serving suggestion - Serve with freshly boiled fluffy dry white rice
