- Mix together the Norwegian smoked salmon, cream cheese, creme fraiche and fresh herbs using a hand blender to ensure a smooth texture
- Add chili flakes or cayenne pepper and black pepper to the mixture, and then the zest from half a lemon and a squeeze of lemon juice. Add extra lemon, salt, and pepper to taste
- Spoon into small shot glasses or glass dishes to serve as an elegant tray of canapés, Garnish each mousse with caviar and a small sprig of dill.
